Cookie Monster

Let’s face it. Allergies can be really annoying when it comes to desserts. Alright, food generally but I get more upset about not getting to eat dessert. 

A little while ago I ran across this super simple cookie recipe: Take mashed banana. Add oats until it’s a decent consistency. Bake at 350 until it’s done. 

I like to add blueberries, but I found these cookies tend to mould if you don’t eat them quickly. Boo. They’re also very thick, and more like a breakfast cookie than anything else.

Today, however, I think I have found a winner!  

They’re crunchy, sweet, and totally easy to make. They are also wheat free (use GF ingredients to make it gluten free) and egg free. Here’s the recipe!

Oatmeal cookies

Mix together until mealy: 
3 cups oats 

1 tsp baking soda

1/4 tsp salt

1/2 cup brown sugar

1/4 cup white sugar
Then mix in: 

1/4 cup oil (coconut works well)

1/4 cup milk 

1 tsp vanilla (optional)
Then stir in: 

1/2 cup chocolate chips (optional) 
Coat your hands with a bit of oil, and roll mixture into 1″ balls. Put on a lined cookie sheet, and press down firmly. Don’t despair: it’s VERY crumbly, but with pressing they sort of stick together- they’ll turn out.
Bake for 8-10 mins (I found 8 was more than enough on a dark cookie sheet in a convection oven!). Let them cool a bit on the sheet, then more on a rack. Enjoy!
